Of the diner experience. And of the talented and hard-working people I hire who make me look good. Quality matters a great deal to me. I’ve staked my entire career on it.
I opened a sandwich shop because, come lunchtime, I would find myself foraging in the kitchen at Craft and placing whatever I found between two slices of bread so I could walk back to my office, multi-tasking along the way. I figured if I was craving great, fresh, well-prepared food (between two pieces of bread) at lunchtime, others must be too.
