And now, the recipe you’ve all been waiting for, here is one of Matty’s all-time favourite dishes, created by his wife Trish.

Trish’s Chicken
Prep: 1 hour
Serves: 4-6
Ingredients
- 12 chicken thighs, skin on
- 1 cup (128 grams) cauliflower, chopped. (optional)
- 1 lemon (2-3 tablespoons), quartered
- 1 cup (128 grams) pitted prunes
- 1 cup (128 grams) pitted green olives
- 3-4 tbsp (21 grams) sherry vinegar or apple cider vinegar
- 3 tbsp (21 grams) olive oil
- 3 cloves (21 grams) garlic, smashed
- Salt, Pepper to taste
Method
1. Preheat oven to 450°F (230°C)
2. In a large mixing bowl, add chicken thighs, cauliflower, prunes, olives, vinegar, oil, garlic.
3. Squeeze lemon quarters all over and then add your rinds to the mixing bowl. Add salt and pepper to taste.
4. Combine using your hands until everything is mixed well and coated.
5. Transfer mix to a roasting pan, chicken should be skin side up and put in the oven.
6. Roast for about 40 minutes, until the chicken is crispy and golden brown. Baste your chicken using the drippings in the roasting pan occasionally, at least twice.
7. Once chicken is fully cooked, remove from oven, allow to rest for 10 minutes
8. Serve over white rice
